Greek Lentil Salad

Ingredients
  • 1 cup Lentils
  • 1 Cucumber (Chopped)
  • 1 cup Cherry tomatoes (Halved)
  • 1/2 Red onion (Thinly sliced)
  • 1/2 cup Feta cheese (Crumbled)
  • 1/4 cup Olives (Sliced)
  • 1/4 cup Fresh parsley (Chopped)
  • 2 tbsp Fresh mint (Chopped)
  • Lemon Vinaigrette
  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • 1 clove garlic, minced
  • 1 tsp dried oregano
  • Salt and pepper to taste

    Rinse and cook lentils in boiling water for 20-25 minutes. Drain and cool.

    Chop cucumber, halve cherry tomatoes, and thinly slice red onion.

    Whisk together lemon juice, olive oil, garlic, oregano, salt, and pepper.

    In a large bowl, combine lentils, vegetables, feta, and olives. Toss with dressing.

    Sprinkle with parsley and mint. Toss gently and serve.
